Peach Iced Tea

Ingredients

  • 250g white sugar

  • 250mL Water

  • 5 ripe peaches

  • 4 tea bags

  • 2 Litres water

  • Handful of ice

  • 1 sliced peach to serve

Method

  1. Sugar Syrup

    In a saucepan, add sugar and water. Slowly simmer while the sugar dissolves, and bring up to a gentle boil. 

  2. Chop up 5 peaches, removing stones. Add chopped peaches to the saucepan.

  3. Let it simmer. Remove from the heat when the peaches are soft and mash up with a fork.

  4. Let sit for 30 minutes to infuse.

  5. Pour sugar/peach mix through a sieve into a bowl and mash to drain all liquid into the bowl

  6. Transfer to a jar and store in the fridge for up to a week.

  7. Iced Tea

    Put the teabags in a large heatproof jug, and pour in 500mL boiling water. Let steep for 3-4 minutes.

  8. Remove tea bags. Leave to cool for 5 minutes, then add 1.5 litres of cool water and ice.

  9. Stir peach syrup into iced tea.

  10. Serve with sliced peach pieces.
